Fatback (back fat) is the layer of fat under the skin from the back of the pig near the spine, and is a hard fat. Fatback can be rendered, used as flavoring, or cured. Our fatback retains the skin, and makes great cracklings (pork rinds)! Fatback is also used in many recipes for flavor and to add fat to the cooking. Traditional Southern, Cajun, and Quebecois cooking use fatback, as well as in European dishes.
Our fatback is beautiful! It is packaged in amounts from just under 2 lbs to 4.75 lbs, with the average package at about 3.33 lbs. We ask for a deposit of $2/lb with the remainder due when we assemble your order.
