Fatback is the layer of fat under the skin of the back of the pig. Fatback can be processed into lard or used in cooking. Our fatback retains the skin, and makes great cracklings (pork rinds)! Fatback is also used in many recipes for flavor and to add fat to the cooking. Traditional Southern, Cajun, and Quebecois cooking use fatback, as well as in European dishes.
